Emergency Xmas meal ideas...

So we are supposed to drive to our families on Xmas eve afternoon but are predicted more snow tonight & Thursday. I'm hoping to still go but would like ideas for an easy Xmas meal for 3 (2 adults & a greedy toddler) that can go in the freezer if I don't make it :)

I have a joint of beef but don't really want to buy loads of veg that will hopefully not get used for over a week - so I need freezeable side dishes if poss.
 
How about bags of frozen veg? At least you know it's not going to go off.
 
yeah just get frozen veg i never buy anything else cus we dont have the room to store it (but we have2freezers) its already prepared and just chuck it in the steamer!
 
Lol - never even thought of frozen veg :dohh: I never usually get it except peas. We only have a tesco metro or m&s in town so I'll have to see what they have.
 
we are having xmas dinner at home. i bought the meat a while ago and at the weekend we bought frozen veg at least that way, if we cant get out to get fresh, we can still have our xmas dinner x
 
tesco should have loads hun.. but yeah frozen veg and you dont have to worry about it
 
yeah frozen veg and then it wont go off when you hopefully manage to go to your families x
 
i dont know if u can get Mash Direct where you are, they are in the chilled section. they do mash, parsnip etc is family or small sized portions!
 
you can pretty much do a roast from frozen..

meat - lamb or beef joints
veg
aunt bessie potatoes, stuffing, yorkies

even pigs in blankets can be cooked from frozen
